Professional Waffles

For my birthday this past leap year my girl gave me a professional restaurant style waffle maker.
I make my waffles from scratch and besides the best waffle that I ever had in Amsterdam, this machine makes the best waffles and puts all other waffle machines to shame.
I can't give you my secret recipe for a homemade waffles but you can look at the process.......
Hahahahahaha. I am the Waffle King of America!










Pancakes will have to take a back seat....I'm a waffle man now.

CHRISTO'S BANANA CREAM CUPCAKE

This is the best cupcake that you will ever taste.
The recipe is easy and the cakes are so moist that I don't have to use a banana pudding inside the cake which I tend to like in a cupcake.
Ingredients:
1/2 cup shortening (I use Crisco...Duh?)
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
1 cup mashed ripe bananas
1/4 cup buttermilk
2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
Frosting:
1/2 cup butter, softened
1 1/2 cups confectioner's sugar
3 tablespoons milk
1 teaspoon banana extract

In a large mixing bowl, cream shortening and sugar. Add the eggs, vanilla, bananas and buttermilk. Combine the flour, baking powder, baking soda and salt; add to banana mixture. Fill paper lined cups two-thirds full.

Bake at 350 degrees F for 15 - 20 minutes or until a toothpick comes out clean. Remove to wire racks to cool completely. In a small mixing bowl, cream the butter, sugar, banana extract and enough milk to achive desired spreading consistency. Pipe out frosting any way you like.

POP DOGS @ KLATCH, NYC

My 'POP DOG' paintings will be on display at Klatch Gallery
April 18th thru May 16th. I decided not to have an opening reception but to have a closing reception on Friday, May 16th from 5 to 7 PM. The address is 9 Maiden Lane, New York, New York. 10038 between Broadway and Nassau Streets. There will be food, drinks and my handmade original design tee-shirts for sale. Come on down and bring your checkbook. You can view the paintings anytime between the hours of 7 AM to 7 PM Monday April 21st thru Friday May 16th. Hope to see you there.

New Paintings




I've been working on some new Abstract Art paintings. Enamel paint (which is real difficult to control) on masonite board. (which is a fiberboard made from pressed wood fibers with a glossy finish) The hard glossy surface, along with the slippery paint made these paintings a artistic challenge with black being the prominent color and primary colors being the secondary colors.




I'm experimenting with oil based paint (the green on the left painting) under some of the black enamel paint to achieve an interesting affect when brushed away. These paintings are all large is size with 3 feet by 4 feet being the minimum and 6 feet by 8 feet being the maximum.
If you have a wall big enough to house a six foot by eight foot painting-then you can afford to buy one of my paintings.

Vegetarian Pot Pie

6c. boiled potatoes, 1/2" cubes
2c. carrot circles, 1/4" thick
2c. chopped onions
6 garlic cloves
2 Tbs. olive oil
3 Tbs. water
1c. frozen green peas
2c. soy milk
2 Tbs. whole wheat flour or cornstarch
1/4 tsp. salt
1 Tbs. paprika
1 Tbs. basil
1 Tbs. oregano

one sheet of puff pastry dough......Wash potatoes leaving on the skins. Boil in several inches of salted water. Cool slightly and cut into chunks. Measure and put into bowl. Clean carrots and slice. In saucepan, steam in small amount of water until almost tender. Drain and add potatoes. In skillet, saute garlic and onions in oil and water until soft. Add to bowl along with peas. TO MAKE GRAVY: Blend next six ingredients briefly on high. Pour into saucepan. Make one more recipe of gravy and add to saucepan. Cook, stirring constantly on medium-high until thickened. Pour over vegetables in bowl. Gently mix everything together and simmer for about 20 minutes. Put into baking dish. Top with puff-pastry dough and bake at 350 for 20-25 minutes or until puff-pastry is golden brown. This pie was made in England on New Years Eve.
It was the best meal to end 2007!

AMSTERDAM.....I'M NEW YORK!

Well it's been four months since I last blogged.
I've been away a long time but now I'm back and better than ever! I spent some time in Europe: England, France and Holland. London, Paris and the countrysides were all great but Amsterdam was my favorite. Renting a houseboat on one of the canals was the way to go. The best way to get around is by bicycle and everybody has one. There is a whole different way of living here that everyone should experience at some point in their lives. I will be going back for sure but not during the winter.
Moved to a new city in America. More on that later.
